Ingredients:
2 1/2 cup Oats (old fashioned)
1 cup Greek yogurt, plain
2 Eggs
1/2 cup Agave
1 1/2 tsp Baking powder
1/2 tsp Soda
2 cup Strawberries, diced into small bite size pieces, divided
Preheat oven to 400 degrees.
Process the oats in a food processor. In a large bowl, combine oats and remaining ingredients, while leaving 1 cup of strawberries aside. Spray muffin tin with nonstick cooking spray. Pour mixture in muffin tin. Put a few slices of strawberries on top of each muffin.
Bake for 12 to 15 minutes. Makes about 24 mini muffins or 12 regular size muffins.

sorry the picture is not cute! so don't judge the recipe by my ipone picture taking skills! these are amazing and super easy to make. a perfecct way to use up strawberries before they go bad. oh! and did i mention that they are totally low in calories. i think a mini muffin has 56 calories and a regular muffin has 112. i perfer the mini muffins over the regular because then i feel like i can get away with eating more!
